Smoked Tomato Pasta Sauce
Ingredients:
4 small onions
Olive oil
3 mushrooms
Soy sauce
Liquid smoke
6 beef tomatoes
10 cherry tomatoes
Crispy chilly oil (Laoganma)
Plain soya mince
Maple syrup
Method:
Drizzle one tablespoon of olive oil onto a non stick pan (medium to high heat) and add sliced onions. Sprinkle with salt and allow it to cook till translucent.
Slice the 3 mushrooms and add them to the pan. Cook undisturbed for 2 minutes. Flip the mushrooms and cook for 1 to 2 minutes more. The mushrooms should be turning golden-brown and releasing some of the liquid. Add 2 tablespoons of soy sauce, 2 teaspoon of liquid smoke, and cook until all the moisture has evaporated.
Chop your tomatoes into same sized bite sized, and add them to the pan, with the crispy chilly oil and some salt. Blend the soy mince into a powder and add to the pan. Add 1 tablespoon of maple syrup and cook it all down until all the moisture has evaporated.
Blend the mixture. Add a little of pasta water whenever you use it. Season to taste and enjoy.
